As a farmstead creamery, Capra Nera handcrafted cheeses are made from a single source of milk: the thirty or so goats that comprise the milking herd at the farm in rural SE Minnesota. The ladies – all of whom have names, such as Eleanor Roosevelt or Button – are fed a small amount of grain at milking time, but otherwise enjoy the lush pasture plants for much of their production season. Farmer Katie Bonow is also the cheesemaker – from grass, to goat, to cheese!
